Okay, so for those you who follow my blog, you probably know that I’ve been perfecting a lot of vitamix recipes.
This recipe actually came to be by accident. I was trying to perfect my frosty recipe, but the result ended up tasting exactly like cool whip.
I definitely wouldn’t consider this a fail
I used a few ingredients that most people probably wouldn’t have at home. If you want to find where to get them, check out my favorites page.
You are going to need
1. 9 large ice cubes
2. 1/2 tsp lucuma powder
3. 1 scoop of vanilla protein powder
4. 2 tsp caramel flavored syrup
5. 2 tsp clear vanilla extract
6. about 1/4 cup liquid: I really recommend using a dairy product such as whole milk or half and half. If you’re looking for a nondairy alternative, coconut milk works great as well, but the thicker the better end result.
7. 1/2 tsp xanthan gum
8. Some fresh mint
If you’re using a high quality blender, this is going to work really really well, if you don’t, it may not be exactly like cool whip, but it will still be good.
Combine everything together except the xanthan gum
When it’s pretty much mixed and broken down well, add in the xanthan gum.
Mix until it’s fluffy and homogeneous.
Top on whatever you’d like or feel free to eat it straight!
